Confectionery manufacturers are placing greater emphasis on repeatable cooking, aeration, flexible forming and line integration as marshmallow portfolios become more varied.

SHANGHAI, CHINA - Confectionery manufacturers reviewing marshmallow capacity in 2026 are increasingly focused on three practical issues: stable process control, faster product changeovers and a production line that can connect forming with downstream handling. The shift is moving equipment discussions beyond headline speed and toward how reliably a complete process can reproduce an approved product.


Process control is becoming the center of line design
Marshmallow quality depends on several connected operations rather than one isolated machine. Syrup condition, cooking temperature, transfer timing, aeration and forming all influence density, internal structure, shape and surface appearance. When these stages are managed separately by manual judgment, variation at one point can affect the stages that follow.
Modern automated lines are therefore being evaluated by their ability to coordinate process settings. Automation does not make every formula behave the same way, but it can help operators reproduce validated settings after the recipe, product format and factory conditions have been confirmed.

Cooking and aeration remain the critical quality chain
Cooking prepares the syrup for the required concentration and processing condition. Aeration then incorporates and distributes gas through the mass to create the target density and texture. If the mass reaches the aeration system outside the validated temperature or viscosity range, forming stability and finished-product consistency may change.
This is why manufacturers are asking suppliers to review the formula, process description or finished sample before finalizing equipment. Gelatin-based, gelatin-free, plant-based, filled and specialty products should be tested or technically reviewed against the proposed configuration rather than described as universally compatible.


Flexible forming is changing equipment requirements
The marshmallow category now includes more than classic cylinders. Deposited shapes, extruded ropes, cut pieces, multi-color twists and center-filled products can require different forming, filling, cutting, nozzle and control arrangements. A line described as flexible must therefore show which formats are included in the base scope and which require optional modules.
For factories planning frequent product changes, changeover time, access for cleaning and the replacement of nozzles, cutters or filling parts can influence daily output as much as nominal kg/h capacity.

Capacity decisions are becoming more project-specific
Published equipment data is useful for early planning, but usable output depends on piece size, density, forming method, recipe behavior, operating hours, cleaning and changeovers. Buyers are increasingly comparing capacity together with factory space, utilities, staffing and downstream packaging instead of treating one output figure as a universal production guarantee.

A production project may include cooking, transfer, aeration, depositing or extrusion, cutting or filling, cooling or conditioning, conveying, coating and connections to inspection or packaging. Manufacturers are paying closer attention to the boundaries between these stages because an efficient forming machine does not by itself guarantee a balanced line.
The technical agreement should identify the equipment list, controls, product-contact materials, layout, utilities, testing method, acceptance criteria, documentation and responsibilities for installation and commissioning. This turns a general machine proposal into a measurable production project.


What the automation trend means for manufacturers
The practical direction of marshmallow automation is clear: factories want a line that can hold a validated process, support the planned product range and provide evidence during testing. Manufacturers considering an upgrade should begin with the finished product and operating plan, then compare suppliers against the same written requirements.
For equipment suppliers, the same trend increases the importance of transparent capacity data, real production evidence, project-specific claims and documented service scope. Manufacturers can compare these signals more effectively than broad statements about quality or innovation.
