The poster shows that the beverage comes in various, vibrant flavors — from matcha and mango to taro and strawberry — and it pulls you in to make an order. But you don't even know where to begin when you see all of the creative ways you can customize your drink. How do you choose different boba? And how these different boba are produced?
You may hear this colorful beverage called different names — bubble tea, boba milk tea or pearl milk tea. But let's start by clarifying what boba is. Usually it's used to refer to the tapioca pearls, which are small chewy orbs that sit at the bottom of most boba teas. But after years of development of bubble tea, today, there are not only tapioca pearls in boba, popping boba and konjac boba are also common and popular.The taste and raw materials of these boba are completely different, and correspondingly, their production methods are also completely different, so the machines required are also different.
Tapioca boba
Tapioca boba (or tapioca pearls) are made of cassava starch, which comes from the cassava plant. These pearls start off white, hard and tasteless, but then they're boiled and steeped in a sugary syrup (often brown sugar or honey) for hours. Once they're ready, they become those beloved dark, chewy pearls that have to be slurped up with an extra-large straw.
This boba is the most traditional and common boba. When you're making it, you mix tapioca flour and other compound flours like black sugar and colors with water and knead it into a dough. In the final, put the kneaded dough into the tapioca pearl machine, and the forming machine adopts spherical extrusion forming technology to automatically produce boba.
Popping boba
Popping boba, also called Popping Pearls, is a type of "boba" used in bubble tea. Unlike traditional boba, which is tapioca-based, popping boba is made using the spherification process that relies on the reaction of sodium alginate and either calcium chloride or calcium lactate. Popping boba has a thin, gel-like skin with juice inside that bursts when squeezed. The ingredients for popping boba generally consist of water, sugar, fruit juice or other flavors, and the ingredients required for spherification.
In addition to being used in place of traditional boba in bubble tea, it is used in smoothies, slushies and as a topping for frozen yogurt.
